My ribs spend many months in an unheated storage garage with no varnish. They were fine when I took over the project and began building wings. You could varnish now, but, as I'm sure you already know, be careful not to varnish glue joints. I think they would be fine in the environment you have them stored in with no varnish. When you do varnish the wood parts, I like to do the first coat with a thinned down coat thinned 10% so it will soak in deeper, then final coat with regular strength.
